If you have a zucchini sitting in your fridge and you’re not quite sure what to do with it, make these!
These Ground Turkey & Zucchini Quesadillas are one of those easy dinners that came together with ingredients I already had on hand—and they turned out so good. The shredded zucchini cooks right into the taco-seasoned ground turkey, so you’re getting some extra veggies without feeling like you’re eating a “healthy” quesadilla. My daughter even loved them!!
They’re cheesy, crispy, filling and perfect for a quick weeknight dinner. Plus, you can easily make them gluten-free by using your favorite gluten-free tortillas.
I use my quesadilla maker I’ve used for years… but you can make them a different way too!

Ground Turkey & Zucchini Quesadillas
Crispy, cheesy quesadillas filled with taco-seasoned ground turkey and shredded zucchini. An easy weeknight dinner and a delicious way to sneak in some extra veggies!
Ingredients
- 1 lb ground turkey
- 1–2 medium zucchini, shredded
- 1 packet taco seasoning
- 1/3–1/2 cup water, or amount called for on taco seasoning
- 1 1/2–2 cups shredded Mexican-blend or cheddar cheese
- 6–8 tortillas (use gluten-free if needed)
- Olive oil, avocado oil or cooking spray, optional
- Salsa, sour cream or Greek yogurt, for serving
- Optional: lettuce, avocado or guacamole
Directions
- Brown the turkey. Cook the ground turkey in a large skillet over medium heat, breaking it into small pieces as it cooks.
- Season it. Add the taco seasoning and water. Stir until the turkey is evenly coated.
- Add the zucchini. Stir the shredded zucchini directly into the turkey. Cook for 4–6 minutes, until the zucchini is tender and most of the extra moisture has cooked away.
- Assemble the quesadillas. Sprinkle cheese over half of each tortilla. Add a layer of the turkey-zucchini mixture, top with a little more cheese and fold the tortilla in half.
- Make them crispy. Heat a clean skillet over medium heat. Lightly oil or spray the pan if needed. Cook each quesadilla for about 2–3 minutes per side, until golden brown and crispy and the cheese is melted.
- Serve. Cut into wedges and serve with salsa, sour cream or Greek yogurt, lettuce, avocado or your favorite toppings.
