If you love sushi but don’t want to deal with rolling individual pieces, this Sushi Lasagna is such a fun shortcut. It has all those sushi flavors I love—sticky rice, smoked salmon, avocado, cucumber and cream cheese—layered together in a pan and flipped out before serving. It’s a big… everyone loved it and now I crave it!!

Easy Smoked Salmon Sushi Lasagna
If you love sushi but don’t want to deal with rolling individual pieces, this Sushi Lasagna is such a fun shortcut. It has all those sushi flavors I love — sticky rice, smoked salmon, avocado, cucumber and cream cheese — layered together in a pan and flipped out before serving.
Ingredients
- 2 cups cooked sticky or sushi rice
- 2 tablespoons rice vinegar
- 1–2 teaspoons sugar
- 3–4 organic sushi nori sheets
- 24 ounces smoked salmon (I used two 12-ounce packages from Costco, but you can definitely use less)
- 1 container whipped cream cheese
- 1 cucumber, sliced lengthwise into thin strips
- 1 avocado, thinly sliced
Instructions
- Prepare the rice. Cook the sticky rice according to the package directions. I use a rice cooker, and it is so worth it — it makes the rice easy and consistent every time. While the rice is still slightly warm, gently stir in the rice vinegar and sugar, then let it cool.
- Prepare your pan. Line a small baking dish or loaf pan with plastic wrap, leaving a little extra hanging over the sides. This makes it much easier to flip the sushi lasagna out at the end.
- Start layering. Press a layer of sticky rice firmly into the bottom of the pan.
- Add a sheet of nori, trimming it if needed to fit your pan.
- Spread on a thin layer of whipped cream cheese.
- Add a layer of smoked salmon, followed by cucumber and avocado.
- Add another layer of rice and continue layering the ingredients until the pan is full, finishing with a layer of rice.
- Gently press everything down so the layers hold together.
- Place a serving plate upside down over the pan, then carefully flip everything over. Lift off the pan and remove the plastic wrap.
- Slice into squares and serve!
Optional Toppings
Drizzle with spicy mayo, soy sauce or coconut aminos, and sprinkle with sesame seeds or sliced green onion if you like.
I used a full 24 ounces of smoked salmon because I wanted plenty in every bite, but you could easily use just one 12-ounce package for a lighter version.
