This is the appetizer I’ll be making for a NYE Eve party we’ll be attending. It’s a family favorite. It’s a wonderful Reuben dip that we eat warm in the crock pot with crackers! Mix the following and put in a crock pot….
Approx. 3/4 lb corned beef sliced into small pieces – (I use (6) 2 oz Buddig brand packages – I buy mine at Walmart)
8 oz shredded swiss cheese
8 oz shredded cheddar cheese
1 large jar glass sauerkraut (drain juice)
3/4 cup mayonnaise or thousand island dressing
I usually microwave the entire mixture for a few minutes and stir it before I put it into the crock pot. If you don’t want to use the microwave… that’s fine too! Just keep the dip in the crock pot a little longer so all the cheese melts and is nice gooey! 🙂
Then just keep the crock pot on low with the dip…. just to keep it warm.
BTW, I found the cutest new crock pot on Walmart’s website… I wish I needed a new one! It’s so nice and cute… and only $40!
